Summer Borscht

This soup is quite sharp in taste due to the beet greens. This is a good soup to add a bit of sweet cream to.

INGREDIENTS

1 ham bone
2 quarts cold water
2 cups finely chopped beet greens or sorrel leaves
1/2 cup chopped green onions
1/3 cup fresh dill
3 to 4 medium-potatoes, diced
Salt and pepper, to taste
1/2 cup sweet cream

Boil the ham bone in water for 1 hour to make 1 quart of soup broth. Add the vegetables and greens. Boil until the vegetables are tender and leaves are tender. Just before serving, add the cream and serve hot.
