Broccoli Bread

INGREDIENTS

2 (1-pound) loaves frozen bread dough, thawed
1 or 2 heads fresh broccoli, cut into florets with no stems
1 can pitted black olives, chopped
Garlic powder
Olive oil
Red pepper flakes
Grated cheese
Salt and pepper, to taste

Cook broccoli florets, no stems, until tender. Drain, let cool, squeeze out any excess liquid, and chop fine.

Flatten out thawed bread loaves into individual long rectangles on a lightly floured surface.

Sprinkle cooled, chopped broccoli on top of flattened bread. Sprinkle chopped black olives and red pepper flakes over broccoli. Salt and pepper, to taste.

Drizzle olive oil sparingly over vegetables, then sprinkle with grated cheese to cover thinly. Sprinkle with garlic powder on top of cheese.

Roll up lengthwise; tuck ends under and pinch short ends closed. Bake on parchment paper covered cookie sheet at 350 degrees until golden brown. Remove and place on wire racks to cool.

Cut into slices and serve with a salad or as an appetizer to your meal.

NOTE -  Once baked, this bread can be frozen in freezer paper - simply reheat from frozen state until thawed.
