Herb-Butter Sauce For Grilled Steak

Next time you barbecue steaks on the grill be sure to serve them with this cold herbed butter. Spoon it generously over the hot steak and watch it melt into a flavorful sauce that will delight any palate. Complete the meal by serving hot buttered corn on the cob, a salad of ripe cherry tomatoes and chunks of feta cheese tossed in vinaigrette dressing and a hearty red wine.

INGREDIENTS

1 cup butter
2 tablespoons freshly squeezed lemon juice
1/4 teaspoon pepper
1/3 cup chopped parsley
1 teaspoon dried tarragon leaves
Dash of Tabasco Sauce
4 beef top loin steaks, about 3/4 pound each

PREPARE HERB-BUTTER SAUCE - Put butter in a small bowl and let stand at room temperature until softened. Beat with a wooden spoon until smooth and fluffy. Add lemon juice, pepper, parsley, tarragon and Tabasco; beat until thoroughly blended.

Spoon butter sauce into a serving bowl; cover and refrigerate until you are ready to serve. Makes 1 cup. Sauce can be made up to 1 day in advance. Remove from refrigerator 30 minutes before serving. This sauce is served cold and is spooned onto hot grilled steaks.

Plan to light your charcoal fire at least 30 minutes before you want to begin cooking the steaks - the coals should be very hot and glowing. Position the rack of the barbecue grill about 6 to 8 inches above the top of the hot charcoal.

Have your butcher cut the loin steaks so that they are 1 to 1-1/4-inches thick. If desired, you may substitute Porterhouse or T-Bone steaks. No matter which you choose, be sure the meat is very fresh and either choice or prime quality.

For a hickory-smoked flavor, soak several handfuls of hickory chips in water, drain, and add to charcoal just before meat goes on to cook. Arrange steaks on grill over coals and cook, uncovered, for 7 to 10 minutes, turning once for rare to medium-rare.

Remove steaks from grill and place on heated serving platter or wooden board; put in a warm oven to keep hot. Serve steaks with the Herb-Butter Sauce. Spoon butter liberally over steaks so it can melt.
