Pineapple Savoy Trifle

You'll really impress your guests if you serve them this Pineapple Savoy Trifle. All you have to do is line a bowl with sliced, store-bought jelly rolls and fill it with a rich, homemade Bavarian cream. Chill until Bavarian cream sets, unmold and serve. Everyone will think you spent hours preparing it. Only you will know how simple it really was.
INGREDIENTS
3 envelopes unflavored gelatin
3-3/4 cups milk
6 eggs, separated
1/4 teaspoon salt
1-1/4 cups sugar
1/4 cup dark rum
1 (8-1/2-ounce) can crushed pineapple, drained
4 (3-ounce size) bakers' miniature jelly rolls
1 cup heavy cream, whippedSprinkle gelatin over 1 cup milk; let stand 5 minutes to soften. Heat remaining milk in top of double boiler, over direct heat, until tiny bubbles appear around the edge of milk.
In medium bowl, beat egg yolks with salt and 1/2 cup sugar until well blended. Add softened gelatin to egg-yolk; gradually add hot milk while stirring egg yolk mixture rapidly.
Return mixture to top of double boiler; place over simmer water. Cook, stirring constantly, until mixture coats a metal spoon, about 15 minutes.
Remove from heat; cool slightly and stir in rum and pineapple. Hasten chilling by placing pan over ice water. Stir occasionally until mixture is thicker than unbeaten egg whites or until it mounds slightly when lifted with a spoon, about 30 minutes.
Meanwhile, line a 3-quart bowl with plastic wrap. Using a serrated knife, cut each jelly roll into 7 slices. Arrange 4 to 5 slices in single layer to cover bottom of bowl; refrigerate. Set remaining slices aside, covered with plastic wrap for later use.
Beat egg whites with electric mixer until soft peaks form when beater is lifted; gradually beat in 3/4 cup sugar until stiff peaks form. Add whipped cream and chilled-gelatine mixture; beat at low speed just until combined. Cover bottom of prepared bowl with cream mixture.
Place 2 rows of reserved jelly roll slices around sides of bowl. Fill with gelatin mixture; chill several hours or until firm.
To serve, invert bowl on chilled serving dish; remove bowl and plastic wrap. Serve with additional whipped cream, if desired.
