Pepper-Baked Brie

INGREDIENTS

8-inch (2-pounds) Brie cheese
3/4 cup blanched whole almonds
3 tablespoons unsalted butter, softened
1/2 small green pepper, chopped
1/3 cup toasted sliced almonds
Assorted crackers or sliced French bread
Red and green grapes, rinsed and cut in small bunches

Preheat oven to 350 degrees. Place Brie on baking sheet. With sharp knife, cut out and discard center piece of rind from top of Brie, leaving 1-inch of rind around top edge of cheese. Set aside.

In food processor, blend whole almonds with butter until mixture is a thick paste; spread over exposed portion of Brie. Place chopped peppers in center.

Bake 15 minutes, or until puffed and melted inside. Quickly decorated edges with almond slices. Serve immediately with crackers or French bread and grapes.
