INGREDIENTS

CREAM-PUFF RING

1/2 cup, 1 stick, butter or margarine
1 cup water
1/4 teaspoon salt
1 cup all-purpose
5 large eggs

ALMOND CHANTILLY

1-1/2 cups heavy cream
1/2 cup confectioners' sugar
2 teaspoons vanilla extract
1/4 teaspoon almond extract

1/4 cup apple jelly
1/4 cup sliced blanched almonds, toasted*
Whole strawberries, optional

MAKE CREAM-PUFF RING - In medium saucepan, combine butter, water, and salt; bring to boiling; remove from heat. Immediately add flour all at once, beating with a wooden spoon until smooth. Return to heat and continue beating until mixture forms a ball and leaves side of pan. Remove from heat. Add eggs, 1 at a time, beating well after each addition. After adding last egg, continue beating until mixture is shiny and breaks in strands.

Preheat oven to 400 degrees. With handle of wooden spoon, trace a 9-inch circle on foil-lined 15-1/2 x 12-inch cookie sheet. Trace a 4-inch circle in center of 9-inch circle. Spoon cream-puff batter into large pastry bag fitted with 1/2-inch star tip. Pipe cream-puff batter onto foil in rings to cover area between between circles, forming a 1/2-inch-high base. Pipe remaining batter onto base to form ten 2-inch-wide mounds.

Bake about 50 minutes, or until ring is firm and deep golden-brown. Turn off heat; leave ring in oven 30 minutes more. Remove to wire rack to cool completely.

MEANWHILE, MAKE ALMOND CHANTILLY - In small bowl of electric mixer, beat cream with confectioners' sugar and extracts until stiff peaks form when beaters are slowly raised. Refrigerate.

In small saucepan, heat apple jelly, stirring just until melted; remove from heat; cool slightly.

TO ASSEMBLE - With long serrated knife, split ring in half horizontally. Pull out and discard any filaments of soft dough. Brush jelly on top half of ring to glaze. Sprinkle almonds on top. Peel off and discard foil from bottom of ring; place ring on serving plate. Spoon Chantilly into large pastry bag fitted with large star tip. Just before serving, pipe Chantilly decoratively into bottom half of ring. Cover with top of ring. Arrange whole strawberries in center.

Makes 10 servings

NOTE - Toast almonds in a 350 degree oven, stirring occasionally, about 10 minutes, or until lightly browned.
