Mixed Green Salad

5 cups bite-size pieces of mixed salad greens, washed and crisped
1 small cucumber, scored and thinly sliced
1 jar (4-ounces) roasted red peppers, drained and quartered
1/4 cup lemon juice
1/2 teaspoon freshly cracked black pepperIn large salad bowl, arrange salad greens, cucumber slices, and pepper quarters. Add lemon juice and cracked black pepper, toss until salad greens are coated.
Serve in a large salad bowl or spoon onto individual salad plates or bowls.
