Macadamia Brittle

INGREDIENTS

2 jars (7 ounces each) macadamia nuts
2 cups sugar
1/2 cup light corn syrup
1/2 cup water
2 tablespoons butter
1/2 teaspoon baking soda

Butter large baking sheet; set aside on wire rack. Cut nuts in half; set aside. In 10-inch nonstick skillet, combine sugar with corn syrup and water. Over medium-high heat, cook, stirring occasionally, until golden-brown.

Stir in nuts; cook, stirring constantly, until medium brown (do not burn mixture). Remove from heat; quickly stir in butter and baking soda. Pour onto prepared baking sheet; cool. Break into pieces.

Makes about 4-1/2 cups
