Holiday Citrus Cookies

INGREDIENTS

1/2 cup butter
1-1/4 cups unsifted all-purpose flour
1/4 cup confectioners' sugar
1 cup granulated sugar
1/4 teaspoon baking powder
1 tablespoon grated lime peel
2 large eggs, beaten
2 tablespoons lime juice
2 drops green food color
Additional confectioners' sugar
Candied lime-or lemon-peel twists

Preheat oven to 350 degrees. Line 8-inch square pan with aluminum foil; grease lightly. In bowl, with pastry blender or two knives, cut butter into 1 cup flour and the confectioners' sugar until mixture resembles coarse crumbs. Press into pan. Bake 15 minutes.

Combine granulated sugar with remaining flour, the baking powder, lime peel, eggs and lime juice; stir in food color. Pour over mixture; bake 25 minutes longer.

Sprinkle warm cookies with confectioners' sugar. Grasp corners of foil; lift cookies from pan. Cut into 16 squares; top with peel twists.

Makes 16 cookies
