Fruited Chicken and Stuffing

INGREDIENTS

6 slices bacon
6 boneless chicken breast halves
1/2 cup butter
1 (16-ounce) jar applesauce
1 cup water
2 (6-ounce each) packages vegetable-and-almond top-of-stove stuffing mix
1/3 cup raisins
1 medium red apple, cored and thinly sliced

Preheat oven to 450 degrees. In a large skillet, sauté bacon until crisp; drain on paper towels and reserve. Add chicken breasts to drippings in skillet; over high heat, sauté 10 minutes, until browned, turning once. Remove to a plate. In same skillet, melt butter; stir in applesauce and water. Bring to boiling; stir in contents of seasoning packet and stuffing mix until blended. Stir in raisins. Remove from heat.

Lightly grease a 3-quart shallow baking dish. Spoon stuffing mixture over bottom of dish; place chicken breasts on top. Arrange apple slices around edge of dish. Cover tightly with aluminum foil. Bake 15 minutes, or until stuffing is steaming. Arrange reserved bacon slices on top of chicken.
