Eggs Ranchero

These Mexican-style eggs are perfect to serve for brunch or supper. Soft-fried tortillas are topped with a spicy tomato sauce, fried eggs, shredded Cheddar cheese, and sliced green pepper. You may want to spread the tortillas with hot refried beans before adding the other toppings. Either way, it's delicious.
INGREDIENTS
RANCHERO SAUCE
2 tablespoons vegetable or olive oil
1 cup finely chopped, seeded, green pepper
1/4 cup finely chopped onion
1 cup chili sauce
1 (8-ounce) can tomato sauce
2 tablespoons lemon juice
1 teaspoon Worcestershire sauce
1/4 teaspoon chili powderEGGS AND TORTILLAS
Vegetable oil
6 corn tortillas
2 tablespoons butter or margarine
6 eggs
1/4 cup grated sharp Cheddar cheese
Green pepper slices, optional for garnishMAKE RANCHERO SAUCE - In a medium-sized saucepan, heat 2 tablespoons vegetable oil over moderately high heat. When hot, add green pepper and onion and sauté, stirring constantly with a wooden spoon, until vegetables are just tender but not browned.
Add chili sauce, tomato sauce, lemon juice, Worcestershire sauce, and chili powder to sautéed vegetables in saucepan. Bring to a boil over high heat; reduce heat to moderately low; cover and simmer for 15 minutes, stirring occasionally.
While sauce simmers, fry tortillas. Add vegetable oil to a small skillet to measure 1/2-inch ddep. Heat oil over high heat until very hot; add one tortilla; soften or cook 20 to 30 seconds, turning once. Do not let tortilla become crisp. Remove fried tortillas from skillet and drain on paper towel. When thoroughly drain, place on a warm platter, cover with aluminum foil and put in a warm oven to keep hot. Repeat with remaining tortillas until all are fried.
Melt butter in a large skillet over moderately high heat. Add eggs, 2 or 3 at a time, and cook over medium heat until whites are completely set and yolk is still runny. Remove from skillet and keep warm. Repeat until all eggs are cooked.
To serve, place each tortillas on a serving plate and to with a little sauce and a fried egg. Sprinkle with cheese and garnish, if desired, with slices of green pepper. Serve Eggs Ranchero immediately.
