Champagne-Glazed Canadian Bacon

INGREDIENTS

2 tablespoons butter or margarine
1-1/2 pounds Canadian bacon, sliced 1/4-inch thick (12 slices)
1/2 cup champagne or dry white wine
1/2 cup apple jelly

In large skillet, over medium-high heat, melt butter. Sauté half of bacon until lightly browned on each side; remove to plate. In butter in skillet, sauté remaining bacon.

Return bacon to skillet; add champagne. Simmer, uncovered, 10 minutes, or until liquid is reduced to 1/2 cup. With tongs, remove bacon to serving platter; cover and keep warm. Add jelly to skillet; stir until melted. Spoon glaze over bacon. Serve immediately.
