INGREDIENTS

Nonstick cooking spray
3 pounds assorted apples (Golden Delicious, Granny Smith, McIntosh)
2 teaspoons julienne lemon peel
1/4 cup low-calorie apricot conserve
2 tablespoons lemon juice
1/4 teaspoon ground nutmeg
1/8 teaspoon ground allspice
1 ounce dried apricots, thinly sliced
Mint sprig

Preheat oven to 375 degrees.

With aluminum foil, cover outside of 8-inch springform pan; grease inside with cooking spray. Set aside.

Core and thinly slice apples; place in large bowl. Add remaining ingredients except mint sprig, toss to combine.

Arrange apples, overlapping and with skin side facing side of pan, in layers. Cover tightly with foil; place on jelly-roll pan.

Bake 50 minutes; remove foil. Bake until apples are tender; about 15 minutes longer. Cool in pan. Serve at room temperature; garnished with mint sprig. For ease in slicing, use electric knife.
