INGREDIENTS

1 ripe pineapple
3 large navel oranges
1/4 cup orange juice
1/4 cup confectioners' sugar
1 (3-1/2-ounce) can flaked coconut or 1 cup peeled and grated fresh coconut

Peel pineapple; cut into rounds 1/4-inch thick. Peel oranges; cut into crosswise slices 1/4-inch thick.

On serving platter, arrange pineapple rings in a single layer; top each with orange slices. Sprinkle with orange juice, then confectioners' sugar.

Sprinkle with coconut. Refrigerate to chill well.
