Golden-Fried Sea Squab (Blowfish/Toadfish/Puffer)

INGREDIENTS 8 sea squab, dressed
1/2 teaspoon salt
Freshly ground black pepper
1/2 cup stone-ground yellow cornmeal
1 cup finely crushed unsalted cracker crumbs
1/2 cup half-and-half
1 cup corn oil
2 lemons, cut in wedgesWipe sea squab with damp cloth. Sprinkle with salt and freshly ground black pepper. Thoroughly mix cornmeal and cracker crumbs on waxed paper. Dip fish in half-and-half and then in cornmeal and cracker crumbs.
Heat oil in a medium-size heavy skillet until just sizzling. Reduce heat. Fry fish for 3 minutes on 1 side until golden brown. Turn fish carefully with a slotted spoon or tongs and fry for 2 minutes on the other side until golden brown. Remove from skillet and drain on paper towels. Serve immediately with lemon wedges.
