Quick-'n-Easy Picnic Cupcakes

INGREDIENTS

1-1/2 cups cake flour
1/2 teaspoon salt
1 cup sugar
1/2 cup milk
1 egg
1/2 cup cocoa
1/2 cup vegetable shortening
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup boiling water
1 teaspoon pure vanilla extract
12 paper cupcake liners

Preheat oven to 325 degrees.

Sift cake flour and salt together in a large bowl.

Thoroughly blend in sugar, milk, egg, cocoa, shortening, baking powder, baking soda, boiling water, and vanilla. Beat mixture for approximately 3 minutes until well blended.

Place paper cups in a muffin pan. Divide batter equally among the paper cups and bake for 30 minutes. Remove cupcakes from oven and set aside to cool.

Makes 1 dozen

SUGAR ICING

2 cups confectioners' sugar
Sprinkling of salt
1 teaspoon pure vanilla extract
1 tablespoon heavy cream

Sift confectioners' sugar with salt into a small bowl. Stir in vanilla extract. Beat heavy cream into the sugar mixture to make a good spreading consistency for the cupcakes.

Coat each cupcake with icing and pack them up for the picnic!
