Nellie's Gingerbread

INGREDIENTS

3 cups all-purpose flour, sifted
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon baking soda
1 cup dark brown sugar
1/2 cup shortening, melted
1 cup molasses
2 eggs, unbeaten
1 cup boiling water
1 tablespoon butter, for pan

Preheat oven to 350 degrees.

Sift flour, cinnamon, ginger, cloves, and baking soda in a large bowl.

In a separate small bowl stir brown sugar into melted shortening. Add molasses and eggs and beat well.

Blend brown sugar mixture slowly into flour, alternating with small amounts of boiling water and beating thoroughly after each addition.

Pour mixture into a buttered 10 x 10-inch baking pan. Bake for 25 minutes.

Serve hot with vanilla ice cream or mounds of freshly whipped cream.
