Hoopers Island Fried Cucumbers

INGREDIENTS

4 medium cucumbers
1 teaspoon salt
1/2 teaspoon white pepper
3/4 cup dry bread crumbs
1 egg, beaten
1/4 cup corn oil

Pare cucumbers and slice into 1/3-inch slices. Pat slices dry with paper towels.

Sprinkle cucumber slices with salt and white pepper. Dip slices into bread crumbs, then into egg, and again into bread crumbs.

Heat corn oil in a large heavy skillet until just sizzling. Brown cucumber slices quickly on each side for 1 to 2 minutes. Drain slices on paper towels and serve immediately.

Makes 6 servings
