INGREDIENTS

1-1/4 to 1-1/2 pounds, about 4 cups, cooked, fresh Brussels sprouts
1 egg, well beaten
3/4 cup dry, fine bread crumbs
2 cups corn oil
Salt, to taste
1/4 cup grated Parmesan cheese

Dip each Brussels sprout into egg and then roll in bread crumbs.

Heat 2 cups corn oil in a large heavy skillet. A piece of bread dropped into the oil will turn golden brown when the temperature of the oil is just right.

Fry sprouts quickly until brown, turning with a slotted spoon about 1 to 2 minutes. Remove sprouts from skillet with a slotted spoon and drain on paper towels. Salt, to taste. Sprinkle grated Parmesan over all and serve immediately.

NOTE - Good as an unusual side dish with fried chicken.
