Crispy Baked Beet Casserole

INGREDIENTS

4 tablespoons butter, melted
4 tablespoons all-purpose flour
1 cup cold water
3 tablespoons dark brown sugar
Pinch of salt
2 tablespoons horseradish
2 pounds cooked beets, see Buttered Beets and Greens recipe
1/3 cup dry bread crumbs
3 tablespoons butter

Preheat oven to 375 degrees.

Throughly blend melted butter with flour over low heat. Gradually mix in water, stirring constantly, until sauce begins to thicken. Add brown sugar, salt, horseradish, and beets. Mix lightly but well.

Pour beets and sauce into a lightly greased baking dish. Sprinkle bread crumbs over top and dot with butter. Bake for 20 to 25 minutes until crumbs are nicely browned.
