Crabby Burgers

INGREDIENTS

2 pounds backfin crabmeat
2/3 cup dry fine bread crumbs
2/3 cup mayonnaise, homemade or store bought
1 egg, well beaten
2 tablespoons horseradish
1 small onion, minced
1 small green pepper, minced
1 teaspoon prepared yellow mustard
1 teaspoon salt
Generous sprinkling of freshly ground black pepper
4 cups corn oil*

Mix all ingredients, except oil, in a large bowl. Toss mixture lightly but well to blend thoroughly.

Heat corn oil in a large heavy skillet or Dutch oven. A piece of bread dropped into the oil will turn golden brown when the temperature of the oil is just right.

Form crabmeat into 12 patties approximately 1/2-inch thick. Fry crab patties until golden brown, 6 to 8 minutes.

Remove crab patties from skillet or Dutch oven with tongs, and dry on paper towels. Serve immediately.

*NOTE - Oil may be strained, refrigerated in a tightly covered container, and used again, but only for crab cakes or other crab dishes.
