Country Potato Salad

INGREDIENTS 8 medium potaotes, peeled, sliced, cooked and chilled
1 medium onion, finely chopped
1 medium stalk celery, thinly sliced
1 small cucumber, peeled, seeded, and coarsely chopped
1 tablespoon fresh parsley, minced
3 hard-cooked eggs, coarsely chopped
1 cup Homemade Mayonnaise, or store bought
2 teaspoons prepared yellow mustard
1 teaspoon salt
Sprinkling of white pepper
1 small green pepper, cut in thin strips
1 small carrot, cut in thin strips
4 to 5 radishes, thinly sliced
6 pimiento-stuffed olives, cut in half
3 large ripe pitted black olives, thinly sliced
PaprikaPlace chilled potato slices in a large salad bowl with onion, celery, cucumber, parsley, and chopped eggs.
Thoroughly blend mayonnaise, mustard, salt, and white pepper. Mix well with potatoes and toss lightly.
Garnish with green pepper and carrot strips, radishes, olives and a lightly sprinkling of paprika.
Cover and chill for 1 hour before serving.
