Cottage Bread Pudding

INGREDIENTS 2 cups white bread cubes
1 cup small-curd cottage cheese
1 cup milk
1/2 cup half-and-half
4 tablespoons butter, melted
2 eggs, well beaten
1/4 cup sugar (1/3 cup for a sweeter pudding)
Sprinkling of salt
1/2 teaspoon allspice
1/4 teaspoon mace
1/4 teaspoon ground cloves
1/4 cup seedless raisins
1/4 cup walnuts, finely chopped
1 tablespoon butter, for dishPreheat oven to 325 degrees.
Thoroughly combine bread cubes, cottage cheese, milk, half-and-half, and melted butter in a medium-size bowl.
Blend in eggs, sugar, salt, allspice, mace, cloves, raisins, and walnuts; mix well.
Pour bread mixture into a buttered baking dish. Bake for 1 hour or until a knife inserted in the middle of pudding comes out clean. Serve hot or cold with mounds of freshly whipped cream.
