Farmer's Chicken-Vegetable Chowder

INGREDIENTS

1 medium-large onion, finely chopped
1 small green pepper, finely chopped
1 small sweet red pepper, finely chopped
3 large ripe tomatoes, peeled and coarsely chopped
1 medium zucchini, diced
1 small yellow squash, cut in thin strips
2 medium carrots, thinly sliced
1 large stalk celery with leaves, sliced
1/2 pound small, whole green beans, ends snapped off
2 small white turnips, peeled and thinly sliced
5 cups Basic Chicken Broth
1/3 cup raw rice
1 to 1-1/2 cups cooked chicken, cut in small pieces
2 green onions, with tops, cut in 1-inch pieces

Place all vegetables, except scallions, with chicken broth in a large heavy kettle or Dutch oven. Bring broth to boil. Reduce heat and simmer for approximately 10 minutes. Stir in rice.

Cover kettle or Dutch oven and simmer broth and vegetables for 15 to 20 minutes, until rice is cooked. Add chicken and green onions and mix well. Simmer for 2 to 3 more minutes.

Season individually with salt and freshly ground black pepper.
