Chicken Barbecue In The Oven

INGREDIENTS

4 large, whole chicken breasts
1 large onion, cut in 8 slices
Paprika
1-1/2 cups tomato juice
1 bay leaf
2 large cloves garlic, minced
1-1/2 teaspoons salt
Generous sprinkling of freshly ground black pepper
Pinch of dry mustard
1 teaspoon sugar
1-1/2 tablespoons Worcestershire sauce
3/4 cup cider vinegar
Dash of Tabasco sauce
Pinch of red pepper flakes
2 tablespoons butter, melted

Preheat oven to 300 degrees.

Place chicken breasts, skin side up, in a shallow baking dish. Tuck a slice of onion under each side of breast. Sprinkle chicken breasts with paprika.

Thoroughly combine all other ingredients in a medium-size bowl. Pour mixture over the chicken.

Bake for 1-1/2 hours, basting occasionally with the sauce.

NOTE - This dish may be made a day ahead and reheated before serving.
