Chewy Butterscotch Brownies

INGREDIENTS

8 tablespoons unsalted butter
2 cups light brown sugar
2 eggs
1-1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon pure vanilla extract
1 cup walnuts or pecans, finely chopped
1 tablespoon butter, for pan

Preheat oven to 350 degrees.

Melt butter in a large heavy saucepan over low heat. Thoroughly blend in brown sugar and bring to a boil. Stir well with a wooden spoon and remove saucepan from heat.

Set saucepan aside and cool mixture for 5 to 8 minutes, but do not let mixture harden.

Add eggs, one at a time, to sugar and butter, and beat the mixture well after each addition.

Sift flour with baking powder and throughly blend into saucepan. Stir in vanilla extract and chopped nuts. Mix well, and pour mixture into a buttered 13 x 9-inch baking pan.

Bake for 30 minutes. Remove from oven and let cool. Cut into 36 squares.

NOTE - Brownies may be stored in an air-tight container for a few days, if you have any left to store!
