Carrot Burgers

INGREDIENTS

1 cup grated raw carrots
1 small onion, grated
2 cups of dry fine bread crumbs
1/2 teaspoon baking powder
1 egg, well beaten
2 tablespoons half-and-half, or milk
Dash of Worcestershire sauce
2 tablespoons butter
1 tablespoon bacon fat, or 3 tablespoons butter
Salt and freshly ground black pepper, to taste

Thoroughly mix carrots, onion, bread crumbs, baking powder, egg, and half-and-half (or milk), and Worcestershire sauce in a medium-size bowl. Form carrot mixture into 8 small patties.

Wrap patties in waxed paper and refrigerate for 1 hour.

Heat butter and bacon fat, or butter, in a medium-size, heavy skillet until just sizzling. Brown carrot patties quickly on each side for 2 to 3 minutes. Season with salt and freshly ground black pepper, and serve immediately.
