Cambridge-Style Corn Relish

INGREDIENTS

6 to 8 ears fresh corn, cut from cob, to make about 4 cups
1 large onion, finely chopped
1 medium-size sweet red pepper, finely chopped
1 medium green pepper, finely chopped
2 large stalks celery, finely chopped
1 teaspoon dry mustard
1/4 cup dark brown sugar
1 tablespoon salt
Generous sprinkling of freshly ground black pepper
3/4 cup cider vinegar

Combine all ingredients in a large heavy saucepan. Bring mixture to a boil. Reduce heat and simmer for 15 to 20 minutes. Then set aside to cool.

Refrigerate corn relish in a covered glass dish or bowl. Mix well before serving.

NOTE - Relish should be used within 24 hours for best taste.

Makes about 4 cups
