Broccoli Head with Lemon Butter

INGREDIENTS

1 large head of broccoli, 1-1/2 to 2 pounds
1 teaspoon salt
Basic Chicken Broth

Thoroughly wash and trim broccoli and cut off stem ends. Make diagonal cuts in stalk from stem up to flowerets.

Add broccoli head to 1 inch of boiling, salted chicken broth in a large, heavy saucepan. Cover saucepan and cook broccoli rapidly for 10 to 12 minutes, or until just tender.

Drain immediately and place broccoli head in an attractive pre-heated serving dish. Drizzle hot Lemon Butter over broccoli before serving.

LEMON BUTTER

8 tablespoons butter
Juice of 1 small lemon
2 to 3 sprigs fresh parsley, finely chopped

Melt butter in a small saucepan over low heat. Remove saucepan from heat and let butter stand for a few minutes until the solids settle at the bottom. Skim butter fat from the top, and strain the liquid into another small saucepan or skillet.

Heat clarified butter very slowly over low heat until it turns a golden brown. Stir in juice from the lemon and parsley.

OPTIONAL - 1/4 cup toasted bread crumbs can be sprinkled over all.
