Breakfast Muffins

INGREDIENTS

2 tablespoons butter
1 egg, well beaten
1/2 cup milk
1 cup all-purpose flour, sifted
Pinch of salt
1 teaspoon baking powder
1 tablespoon butter, for muffin pan

Preheat oven to 400 degrees.

Melt butter in a small, heavy saucepan and blend in egg and milk.

Sift flour, salt, and baking powder into a medium-sized bowl. Stir egg and milk into flour mixture, mixing until smooth. Do not overmix.

Spoon batter into a buttered 8-muffin pan. Bake muffins for 20 minutes. Remove from muffin pan and serve immediately.

Makes 8 muffins
