Baked Whole Rockfish (Striped Bass)

INGREDIENTS

1 tablespoon butter
1 whole rockfish, 3 to 3-1/2 pounds, dressed
Salt and freshly ground black pepper
2 tablespoons butter
3 slices bacon
2 to 3 lemons, cut into wedges

Preheat oven to 325 degrees. Butter a baking dish large enough to hold rockfish with basting juices. Dry rockfish thoroughly inside and out.

Sprinkle inside of fish with salt and pepper, and dot with butter. Place fish on its side in baking dish. Lay strips of bacon across top.

Bake for approximately 10 minutes per pound, until fish flakes easily with a fork. Baste 2 or 3 times during baking.

Remove rockfish to a prewarmed platter and spoon cooking juices over top. Serve immediately with lemon wedges.

NOTE - Small, whole boiled potatoes are traditionally served with the baked rockfish.
