INGREDIENTS

STUFFING

2 cups soft bread crumbs
1 tablespoon butter, melted
2 tablespoons capers
1 small dill pickle, minced
1 tablespoon fresh parsley, minced
1 small slice of onion, minced
Pinch of seafood seasoning, optional
Salt and freshly ground black pepper, to taste
1/2 cup boiling water

FISH

1 whole bluefish, 4-1/2 to 5 pounds, dressed
Salt and freshly ground black pepper
1 tablespoon butter, melted
1/2 cup boiling water
1 large slice of onion

Preheat oven to 350 degrees. Mix all stuffing ingredients, except water, in a medium-size bowl. Slowly add water and blend throughly into bread crumb mixture.

Dry bluefish throughly inside and out. Lightly sprinkle inside of fish with salt and pepper.

Stuff bluefish lightly with bread crumb mixture and close with skewers. Brush fish with melted butter and place on its side in a baking dish.

Pour 1/2 cup boiling water into dish and add onion slice. Bake bluefish for approximately 50 minutes or until fish flakes easily with a fork. Remove fish to a prewarmed platter and take out skewers. Serve immediately.
