Apple-Turnip Relish

INGREDIENTS 2 young, medium-size yellow turnips, peeled and finely chopped, about 2-1/2 cups
1 medium onion, finely chopped
1 large, ripe, red apple, peeled, cored, and finely chopped
1/4 cup light brown sugar
1/4 cup cider vinegar
2 tablespoons corn oil
2 teaspoons cold water
1/2 teaspoon salt
Generous sprinkling of white pepperCombine all ingredients in a medium-size bowl and toss lightly but well. Cover bowl and refrigerate overnight. Mix well before serving.
NOTE - Relish should be used within 48 hours for best taste.
Makes about 3 cups
