Basic Meatballs 2

INGREDIENTS 1 pound ground beef
1/4 cup fine, dry bread crumbs or cracker crumbs
1/2 teaspoon salt
1/8 teaspoon pepper
1 small onion, chopped
1 egg
1 tablespoon oilIn medium bowl, combine all ingredients except oil; mix well. Shape into 1-1/2-inch to 2-inch balls. In a large skillet, brown meatballs in hot oil; drain. Add desired sauce to meatballs, cook as directed in recipe.
COCKTAIL MEATBALLS - Shape into 1-inch balls; continue as directed above.
NOTE - To brown in oven, arrange in ungreased shallow baking pan; bake at 400 degrees for 15 minutes or until browned and cooked through.
TO FREEZE - Bag desired amount in Ziplock bags, label, date and freeze.
TO SERVE - Just add to any sauce or recipe as needed.
NOTE - If you use crackers, don't add salt. (1 sleeve saltines equals 1 cup cracker crumbs.) Use a tablespoon measure slightly heaped for a nice size meatball. I bake mine at 400 degrees for about 20 minutes.
