You have two options here. Use packaged Fajita Seasoning Mix or use the marinade below and freeze, then cook and cut up on serving day rather than using the shredded/sliced precooked chicken.
FAJITA MARINADE
2 cups soy sauce
2 cups Worcestershire Sauce
2 cups lime juice (fresh is best, but bottled is fine)
Onions, sliced 1-inch thick
Green peppers, cut in halfMix all ingredients together. Place your meat (boneless chicken breasts, flank steaks, skirt steak, etc.) in a large bag or pan and cover with the marinade (Adjust quantity up or down depending on how much meat and vegetables you have. You want everything to be just covered.) Refrigerate overnight. Drain.
Grill. Slice the meat and vegetables into strips after grilling (much easier than trying to grill small strips).
Serve with tortillas, cheese, salsa and guacamole.
