Blue Cheese Egg Bake

ADVANCED PREPARATION

Cut 12 hard cooked eggs in quarters lengthwise; arrange in 11-¾ x 7 -½ x 1-¾-inch baking dish.

IN SAUCEPAN:

Melt 6 tablespoons butter. Blend in 1/3 cup all-purpose flour, ½ teaspoon salt, and 1/8 teaspoon pepper. Add 3 cups milk; cook and stir until thick and bubbly. Stir in 2 ounces Blue Cheese, crumbled (1/2 cup), ½ cup finely chopped celery, and ¼ cup canned, chopped pimiento. Pour sauce over eggs. Cover; refrigerate up to 24 hours.

Toss 1/3 cup finely crushed saltine crackers crumbs with 1 tablespoon melted butter. Wrap and chill.

BEFORE SERVING

Bake at 375 degrees for 30 minutes. Sprinkle with crumbs. Bake until heated through, 15 minutes more.

Serves 8

NOTE - Plan to use Blue Cheese Egg Bake as the Main Dish for a brunch or lunch, and accompany with bacon, fresh fruit, and fresh dinner rolls.
