INGREDIENTS

3 eggs, or 1 whole egg and 4 whites
1 cup applesauce
1 cup sugar
2 cups grated raw zucchini
3 teaspoons vanilla
2-3/4 cups flour
1/4 cup wheat germ (or additional 1/4 cup flour)
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 cup raisins
1/2 cup chopped nuts

Coat 2 loaf pans with spray oil. Preheat oven to 325 degrees.

Beat eggs, then gradually add sugar, applesauce, zucchini, and vanilla. Set aside.

Combine dry ingredients, raisins and nuts, then fold into wet mixture. Mix thoroughly, but do not beat.

Turn into loaf pans and bake for 1 hour. Cool on wire racks.
