INGREDIENTS

1 cup shredded green cabbage OR Savoy cabbage
1 cup shredded red cabbage
1 raw carrot, coarsely grated
2 to 3 packages low-calorie sweetener, optional
1 cup reduced-calorie mayonnaise
1/4 cup plain nonfat yogurt
Light salt and freshly ground white pepper, to taste
4 teaspoons reduced-calorie Thousand Island dressing
8 slices reduced-calorie whole-wheat bread*
10-ounces cooked turkey, sliced thinly

At least 1 hour before serving, mix the shredded cabbage in a mixing bowl with the carrot, sweetener if you wish, mayonnaise, and yogurt. Add the salt and white pepper.

Just before serving the sandwiches, spread 1 teaspoon of the Thousand Island dressing on each of 4 slices of the bread. Top each slice with some of the turkey and the slaw, and cover with 1 of the remaining bread slices. Press down lightly and slice each sandwich diagonally.

Makes 4 servings

*NOTE - Reduced-calorie whole-wheat bread, usually sliced very thinly, has 35 to 40 calories per slice.
