Low-Fat Lasagna

INGREDIENTS 1 pound ground beef
3/4 cup chopped onion
1 clove garlic, peeled and chopped
1 (16-ounce) can tomatoes
1-1/2 tablespoons tomato paste
2 teaspoons basil
1 teaspoon oregano
2 teaspoons salt
8 ounces lasagna noodles
3 cups low-fat cottage cheese
1 tablespoon parsley flakes
2 eggs, beaten
3/4 pound shredded Mozarella cheese
1/2 cup grated Parmesan cheeseBrown beef with onion and garlic. Drain fat. Add tomatoes, tomato paste, basil, oregano and salt. Simmer, uncovered, 30 minutes, stirring occasionally. Taste for seasonings.
Preheat oven to 350 degrees. Cook lasagna noodles. Drain.
Mix cottage cheese, parsley flakes, and eggs.
In a 9 x 13-inch baking pan, layer half the noodles, cottage cheese mixture, and meat sauce. Repeat layers with remaining sauce. Sprinkle with shredded mozzarella and parmesan cheeses.
Bake for 45 minutes. Let stand 10 minutes before cutting into squares.
