Low-Calorie Celery Broiled Chicken

Broiled chicken is an ideal diet dish if it is not drowned in butter, but you may find dry-broiled chicken dull and monotonous. If so, brighten up your diet with this variation. The chicken is rubbed with lemon instead of butter and further flavored with celery. The only calories in this dish are the ones in the chicken itself. If you do not eat the skin, the calories per serving are reduced to 160 to 200, depending on the size of the chicken.
INGREDIENTS
1 chicken (2-1/2 to 3 pounds) split lengthwise or quartered
3 tablespoons lemon juice
1/2 teaspoon salt
1/2 to 1 teaspoon black pepper
4 stalks celery, cut in halfPreheat the broiler. Rub the chicken all over with the lemon juice, and sprinkle with the salt and pepper. Place the chicken, skin side down, on the rack of the broiler pan. Put 2 pieces of the celery into the cavity of each chicken half or 1 piece into each quarter.
Place the broiler pan 6 to 9 inches from the heat, and broil the chicken for 10 to 12 minutes. Turn the chicken skin side up, and place the remaining pieces of celery over the chicken. Broil until golden brown and tender - about 10 minutes. Pierce the thickest part of the thigh with a small knife; if the meat is no longer pink, the chicken is done. Discard the celery.
