Russian Tea Cakes 3 (Snowballs)

INGREDIENTS 2-1/4 cups all-purpose flour, sifted
1 cup butter, softened
1/2 cup confectioners' sugar, sifted
1/4 teaspoon salt
3/4 cup finely chopped walnuts or pecans
1 teaspoon vanillaMix together thoroughly butter, sifted confectioners' sugar and vanilla.
Sift together and stir in flour and salt. Mix in walnuts or pecans. Chill dough.
Roll into 1 to 1-1/2 inch balls (about the same size as a meatball). Place on ungreased baking sheet (cookies do not spread). Bake at 400 degrees until set, but not brown, about 10 to 12 minutes. While still warm, roll in confectioners' sugar. Let cool. Roll in sugar again.
Makes about 2-1/2 dozen

4-1/2 cups all-purpose flour, sifted
2 cups butter, softened (4 sticks)
1 cup confectioners' sugar, sifted
1/2 teaspoon salt
1-1/2 cup finely chopped walnuts or pecans
2 teaspoons vanillaFollow same directions as above.
