Polpettine (Sicilian Meatballs)

INGREDIENTS

1-1/2 pounds ground beef
1 egg
1/4 cup Parmesan cheese
1 tablespoon parsley, chopped
1 garlic clove, minced
1 hard roll, softened in milk
Salt and pepper, to taste

Mix all ingredients throughly. Shape into small balls about 2-inches in diameter and drop into simmering pot of tomato sauce. Cook slowly, 20 to 25 minutes, stirring carefully.

VARIATIONS - Meatballs may be browned in hot olive oil, then dropped into simmering sauce before serving.

Place meatballs on an oiled broiler pan; turn carefully as they brown.
