Penne Pasta with Pink Vodka Sauce 2

A wonderful combination of flavors that coats the pasta perfectly. So delicious and simple to prepare and one of my favorites.
INGREDIENTS
4 tablespoons unsalted butter
6 shallots, thinly sliced
2 tablespoons fresh thyme, minced OR 2 teaspoons dried thyme
2 tablespoons fresh basil, minced OR 2 teaspoons dried basil
1-1/2 cups heavy cream
1/2 cup vodka
1 tablespoon tomato paste
3/4 cup grated Parmesan cheese
1 pound penne rigate pasta
Salt and pepper, to tasteMelt the butter in a large skillet over medium heat. Add the shallots and sauté until very tender and beginning to color, about 10 minutes. Add the herbs and sauté 1 minute more. Add the whipping cream and the vodka, then simmer until the sauce thickens, about 10 minutes. Add the tomato paste and 1/2 cup of the Parmesan cheese and stir to combine.
Boil the pasta to the desired doneness. Add the drained pasta to the sauce and toss to coat.
