INGREDIENTS 1-1/2 cups bacon, finely diced
1 tablespoon margarine or butter
1/2 medium head lettuce, chopped
3/4 cup all-purpose flour
10 cups chicken stock, homemade or canned
2 medium tomatoes, diced
1/2 teaspoon ground nutmeg
1/2 teaspoon white pepper
2 cups half-and-half creamIn an 8-quart Dutch oven or stockpot, sauté bacon, but do not remove drippings. Add margarine or butter and heat until melted. Add lettuce and sauté about 3 minutes.
Add flour, stirring until mixture is well blended. Cook about 2 minutes.
Add stock, tomatoes, nutmeg, and white pepper. Bring to a boil, stirring to prevent sticking. When heated through, add half-and-half and warm, but do not boil. Garnish as desired.
