Sautéed Lamb with Scallions

INGREDIENTS

1/2 pound boneless lean lamb, very thinly sliced
2 tablespoons soy sauce
1/2 teaspoon salt
1 tablespoon rice wine or dry sherry
1/2 teaspoon ground white pepper
1/2 cup peanut oil
1 tablespoon black vinegar
1 tablespoon sesame-seed oil
3 tablespoons sliced garlic
1/2 pound scallions, halved lengthwise, then cut crosswise, include tops

Place the lamb in a bowl with 1 tablespoon of the soy sauce, the salt, wine, pepper and 2 tablespoons of the peanut oil. Marinate for at least 15 minutes.

Mix together the remaining soy sauce, the black vinegar and the sesame-seed oil. This is the seasoning sauce.

Heat the remaining peanut oil in a wok or skillet. When it is very hot, add the garlic first, then the lamb. Stir-fry over high heat for 10 seconds. Add the scallions and the seasoning sauce. Continue to stir-fry until thoroughly heated, then serve immediately.
