Mutton Chops 2

INGREDIENTS

6 mutton chops
6 sprigs parsley, finely chopped
2 shallots, finely chopped
Salt
Cayenne pepper
1 tablespoon olive oil
1/2 cup fine dry bread crumbs
4 tablespoons butter

Combine the parsley and shallots with small quantities of salt and cayenne pepper, and mix all together in the oil; cover the chops on both sides with these ingredients, shake them in the bread crumbs.

Fry in fresh butter, turning them until quite done.

Serves 6
