Mutton Chops

INGREDIENTS

4 mutton loin chops, cut about 1-inch thick
Salt and pepper
4 tablespoons butter

Trim the chops nicely, leaving only enough of the fat to make them palatable.

Heat an iron griddle over high heat. Place the chops on it. After a minute or two, reduce the heat.

Turn the chops frequently, taking care that the fork is not put into the lean part of the chop. When they are nearly cooked, after about 10 minutes, season them with salt and pepper. Remove from the griddle, spread a little fresh butter over each chop and send them to the table upon very hot plates.
