Charcoal-Broiled Lamb

INGREDIENTS

4 pounds lamb, cut into 8 chops or slices, each about 1-inch thick
1 sprig rosemary

GARLIC MARINADE

8 garlic cloves, crushed
1-1/2 cups white wine
1/2 cup olive oil
6 tablespoons fresh lemon juice
1 teaspoon dried oregano
8 fresh sage leaves, chopped
2 teaspoons chopped rosemary leaves
Salt and pepper

Combine all of the ingredients of the marinade in a large bowl. Add the pieces of lamb and let them marinade for 30 minutes, turning them from time to time.

Drain the marinated pieces of lamb and place them on a grill over hot coals. As the surfaces dry, moisten the pieces with a sprig of rosemary that has been dipped in the marinade.

When the first side is cooked, in about 10 minutes, put the lamb back into the bowl of marinade. Then return the pieces to the grill and cook the other side for 5 to 10 minutes. Serve hot.
