Apricot-Mint Lamb Patties

INGREDIENTS

1 pound ground lamb
2 tablespoons dry bread crumbs
1 tablespoon snipped parsley
1/2 teaspoon salt
1/4 teaspoon dried dill weed
1 egg
1 clove garlic, minced
4 slices bacon
Apricot-Mint Sauce

Mix lamb, bread crumbs, parsley, salt, dill weed, egg and garlic. Shape mixture into 4 patties, each 1-inch thick and about 3-inches in diameter. Wrap bacon slice around edge of each patty and secure with wood picks.

Set oven to broil and/or 550 degrees. Broil patties with tops about 3-inches from heat, turning once, about 15 minutes.

Makes 4 servings

APRICOT-MINT SAUCE

2 (4-3/4-ounce) jars strained apricots (baby food)
1/4 cup mint-flavored apple jelly
1 drop green food color

Mix all ingredients.
