Rodney Dangerfield/Soup Chicken Salad




No Respect

The other day my wife started up with me again. She told me she's tired, she's bored. She wants a new hobby.

I told her, "Why don't you take up cooking?"

She said to me, "When is the last time you thought of taking me out to dinner?"

I told her, "It was right after the last meal you cooked at home!"

I went shopping to a supermarket with her. She took the top off a container of sour cream to see if it was fresh. The sour cream was fresh but she still wouldn't take it. It was opened already.

Last time my wife fixed chicken, I got the wishbone. And if it works, that'll be her last chicken!



INGREDIENTS

2 or 3 cups cooked chicken, cut into bite-size pieces
   (skin and bone the cooked soup chicken and cut up)
1/2 cup walnut meats
3 stalks celery, cut into slices
1 cup seedless grapes (fresh if possible, or canned may be used)
1 green pepper, diced
1/4 cup stuffed green olives, sliced
1/2 cup mayonnaise combined with 1/2 cup sour cream substitute
Lemon juice, salt, pepper to taste
Curry to taste, optional
Mint or watercress garnish



Combine all ingredients except mayonnaise mixture and seasonings. Moisten to taste with the mayonnaise mixture. Season with salt, pepper, lemon juice and curry (if used.)

Serve on a bed of lettuce with watermelon chunks, fresh pineapple, etc., and decorate with mint or watercress.
